tgif! Although I have to say this Friday is a little sad – it’s the last Friday of summer. This is the last in the summer series of Friday Fives and we have five side dishes that will keep the summer vibe going! Salsa, potato salad, deviled eggs, fruit salad and corn – mmmm, I can feel the sun.

It’s a little terrifying to think that we could actually have a blizzard in under a month. No, make that a lot terrifying! Our nights here in Elizabeth have been sliding down to the low 40’s from 80’s during the day, so I can feel fall pushing summer aside. We are forecasted to have a beautiful warm weekend for these last days of summer.

Our first side is mango salsa. I had featured this recipe with ahi and shrimp tostadas. This just feels like summer – fresh, bright and easy!
