Happy Spring, everyone! Another winter is at least officially finished. Here in Colorado, we are definitely not done with snow yet. The benchmark of no more snow is Mother’s day and we sometimes have snow after that. When we moved here from California, I wanted to plant roses and the nice lady at the local nursery told me that they are practically annuals. That kind of broke my summer-all-year-long loving heart. Snow or not, the days are longer and warmer and Easter is just around the corner:) Time to bake some cheerful pastel pudding cookies!
They are all pudding cookies – pistachio, vanilla and strawberry. So easy and so good. And cheerful! I love that you can change the cookie’s flavor and color with just choosing a different pudding or jello.
